If you have one special dinner in Busan, Hanwoo is a good choice. It is Korea's own native beef, and Koreans save it for birthdays, family gatherings and celebrations.
This guide covers what Hanwoo in Busan is, how to read the menu, and where to try it.
What is Hanwoo?
Hanwoo is a native Korean breed of cattle, raised in Korea. It is not the same as imported beef, and it is priced higher. When a Korean restaurant says "Hanwoo", it means this domestic breed.
Hanwoo is graded by quality. From the top, the grades are 1++, 1+, 1, 2 and 3. The top grade, 1++, covers marbling scores No.7 to No.9 on Korea's nine-point marbling scale.
How Hanwoo is priced
At a Hanwoo restaurant, beef is usually priced per 100g, not per steak. You order by weight, it arrives raw, and it is grilled at your table.
A rough plan for two people: start with 200–300g, then add more if you're still hungry.
Which cut to order
- Ribeye (kkotdeungsim): tender and juicy, the classic choice
- Boneless rib (galbisal): chewier, with a rich, nutty flavor
- Thin-sliced brisket (chadolbagi): cooks in seconds, a good first plate
- Assorted: several cuts on one plate, easy when you're not sure
